Ingredients
- 200 g spaghetti pasta
- 150 g fresh shiitake mushrooms
- 100 g enoki or small mushrooms
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 tbsp olive oil
- 1.5 tsp salt
- 1 tbsp freshly ground black pepper
- 1 tbsp vegetarian oyster sauce
- 2 tbsp water
Instructions
- 1Boil the pasta

Add dry spaghetti pasta into a pot of boiling water with a spoonful of salt. Cook for about eight to nine minutes until done, then remove and drain the water.
Tip: Add a spoonful of salt to the boiling water to season the pasta as it cooks. - 2Slice the mushrooms

Place fresh shiitake and other selected mushrooms on a wooden cutting board. Use a sharp knife to slice them evenly for cooking.
Tip: Ensure uniform thickness so the mushrooms cook evenly. - 3Cut the bell peppers

Slice red, yellow, and green bell peppers into thin strips on a wooden cutting board to prepare them for the stir-fry.
Tip: Cutting peppers into uniform strips helps them blend smoothly with the pasta. - 4Drain the cooked pasta

Use chopsticks or a strainer to lift the cooked spaghetti pasta out of the boiling water. Transfer it to a bowl and set aside for later use.
Tip: Reserve a small amount of pasta water if you want to adjust the moisture later during stir-frying. - 5Fry the mushrooms

Heat the pan and add a proper amount of olive oil. Add the sliced mushrooms and stir-fry on high heat for about three minutes until the surface turns golden brown.
Tip: Keep the heat high to get a nice golden crust on the mushrooms. - 6Stir-fry the vegetables

Add the sliced bell pepper strips into the pan with the golden mushrooms and stir-fry evenly on high heat.
Tip: Quickly stir-fry on high heat to blend all the seasonings and ingredients smoothly. - 7Add cooked pasta to the pan

Add the drained cooked pasta directly into the pan containing the sautéed vegetables and mushrooms.
Tip: Make sure the pasta is fully drained before adding it to avoid watering down the flavor. - 8Season the pasta and vegetables

Season the contents of the pan with a small spoonful of salt, a proper amount of freshly ground black pepper, and vegetarian oyster sauce.
Tip: Freshly ground black pepper gives this dish its signature punchy flavor, so dont skimp on it. - 9Toss and stir-fry everything together

Add a splash of water or pasta water to the pan and quickly toss and stir-fry all the ingredients and seasonings together until evenly mixed.
Tip: A tiny splash of water helps create a light emulsion with the sauce so it coats every strand of pasta evenly.
