Ingredients
- 400 g udon noodles
- 150 g white mushrooms
- 150 g shrimp
- 100 g bacon
- 20 g garlic
- 1 onion
- 1 slice cheese
- 3 tbsp light soy sauce
- to taste crushed black pepper
- 1 tbsp chili powder
- 1 tbsp Korean hot pepper paste
- 1 tbsp salt
- 1 tbsp sugar
- 100 ml milk
- 100 ml whipping cream
- a little cooking oil
Instructions
- 1Dice the red onion

Place the red onion on a wooden cutting board and use a chefs knife to carefully cut it into small, uniform diced pieces.
Tip: Keep your fingertips tucked inward to protect your hands while chopping. - 2Slice white mushrooms

Place the white mushrooms on a wooden cutting board and use a kitchen knife to slice them thinly.
Tip: Keep the slices uniform in thickness so they cook evenly. - 3Dice garlic and cut bacon

Chop the garlic cloves into fine pieces and cut the bacon into small segments on a wooden cutting board.
Tip: Dice the garlic finely to release maximum flavor during stir-frying. - 4Prepare the sauce

Combine light soy sauce, crushed black pepper, chili powder, Korean hot pepper paste, salt, and sugar in a small bowl or pot, add a small half-bowl of water, and stir evenly.
Tip: Mix the Korean hot pepper paste thoroughly with the liquid so no clumps remain. - 5Boil the udon noodles

Place the udon noodles into a strainer basket submerged in boiling water and cook for 1 minute, then remove and plunge into cold water to cool.
Tip: Cooling the noodles in cold water stops the cooking process and maintains a perfect chewy texture. - 6Boil shrimp

Place shrimp into a strainer basket submerged in boiling water and boil for 2 minutes, then remove.
Tip: Do not overcook the shrimp so they maintain a tender texture. - 7Sauté the diced onions

Heat a little cooking oil in a pan over medium heat, then pour in the freshly diced onions and stir-fry them until they become fragrant and translucent.
Tip: Ensure the oil is heated before adding the onions to achieve an even sauté. - 8Add garlic and bacon

Toss the diced garlic and small bacon segments into the pan along with the sautéed onions. Continue stir-frying until the garlic is fragrant and the bacon begins to release its flavorful oils.
Tip: Stir frequently to prevent the minced garlic from burning in the pan. - 9Add mushrooms and shrimp

Add the sliced white mushrooms and the pre-cooked shrimp to the pan containing the sautéed onion mixture. Stir-fry everything together until the mushrooms become soft and tender.
Tip: Stir continuously to ensure the mushrooms absorb the flavorful oils from the bacon and garlic. - 10Pour in the sauce mixture

Pour the prepared sauce mixture into the pan with the stir-fried ingredients and mix evenly to coat everything thoroughly.
Tip: Scrape the bottom of the pan while stirring to release any browned bits for extra flavor. - 11Add milk and whipping cream

Pour 100ml of milk followed by 100ml of whipping cream into the pan with the stir-fried ingredients. Stir continuously to combine everything into a smooth, creamy sauce base.
Tip: Pour the dairy gradually while stirring to prevent any separation in the simmering sauce. - 12Add a slice of cheese

Place a single slice of cheese directly into the creamy sauce mixture. Stir gently with kitchen tongs until the cheese completely melts and thickens the sauce.
Tip: Ensure the heat is kept on low after adding the cheese to prevent burning at the bottom of the pan. - 13Toss in the udon noodles

Add the pre-cooked udon noodles directly into the pan containing the rich, creamy sauce. Use tongs to mix everything thoroughly, ensuring every strand of noodle is completely coated.
Tip: Toss gently so the thick udon noodles absorb the flavors without breaking apart.
