Steamed Stuffed Okra
Minced Pork
A tender and savory Cantonese-style home-cooked dish featuring fresh green okra hollowed out and stuffed with flavorful seasoned minced pork, then gently steamed to retain its natural sweetness.
Stuffed okra with minced pork is a classic, comforting dish celebrated for its wholesome ingredients and light preparation method. By steaming instead of frying, the delicate crunch of the okra pairs harmoniously with the juicy, well-seasoned pork filling while absorbing savory depths from preserved mustard greens and oyster sauce.
Ingredients
- 300 g fresh okra
- 200 g pork shoulder
- 30 g preserved mustard greens
- 1 tbsp oyster sauce
- 1 tsp starch
- 1/2 tsp pepper powder
- 1 tsp salt
- 1 tbsp cooking oil
- a few goji berries
Instructions
- 1Chop the pork shoulder

Finely chop the raw pork shoulder on a cutting board using a cleaver until it becomes a coarse mince.
Tip: Chop by hand rather than using a food processor to maintain a better texture and bite. - 2Mix the meat filling

Add preserved mustard greens, oyster sauce, starch, pepper powder, salt, and oil to the minced pork in a bowl. Thoroughly mix and knead the ingredients together until the mixture becomes sticky and holds its shape when lifted.
Tip: Kneading the meat mixture until sticky ensures the filling stays tightly packed inside the okra during steaming. - 3Cut the okra

Place raw okra on a wooden cutting board and use a knife to slice each piece in half lengthwise, preparing them to be hollowed out and stuffed.
Tip: Keep your fingers curled away from the blade while slicing the okra lengthwise. - 4Cut the okra lengthwise

Place raw okra on a cutting board and use a knife to slice it cleanly in half lengthwise.
Tip: Keep your fingers curled inward and away from the blade while slicing through the okra. - 5Scoop out the okra seeds

Use your fingers or a small tool to scrape out the seeds and inner core from the halved okra pieces, creating a hollow channel for the filling.
Tip: Be gentle so you dont puncture or split the outer walls of the okra pods. - 6Steam the stuffed okra

Place the plate of stuffed okra into a steamer wok containing boiling water, cover with a lid, and steam over medium-high heat for about 8 minutes until cooked through.
Tip: Ensure the water is at a rolling boil before putting the plate inside to lock in the freshness of the meat and okra.
