Fragrant Chicken
Dried Mushroom Noodle Soup
A nourishing, homestyle noodle soup featuring succulent free-range chicken and deeply aromatic rehydrated mushrooms, simmered into a rich, golden broth.
This chicken noodle soup is a masterclass in building deep, layered flavors from simple ingredients. By stir-frying the chicken with ginger and rice wine before stewing, the broth becomes incredibly fragrant and clear without the need for artificial seasonings. The addition of rehydrated dried mushrooms provides a sophisticated, concentrated umami depth that fresh mushrooms simply cannot match, creating a comforting bowl that feels truly restorative.
Ingredients
- 500 g free-range chicken, cut into pieces
- 30 g dried mushrooms, soaked for 10 minutes
- 20 g ginger, sliced
- 15 ml rice wine
- 200 g wheat noodles
- 1 tsp salt, to taste
- 1 stalk scallions, chopped
- as needed hot water
Instructions
- 1Prepare the chicken

Place the large pieces of fresh, free-range chicken into a wok and add sliced ginger. Stir-fry over heat to remove moisture and render the chicken fat.
Tip: Fresh chicken does not need to be blanched; stir-frying it directly helps develop a better flavor. - 2Aromatize with rice wine

Pour a dash of rice wine over the chicken while stir-frying in the wok. This step effectively removes any gamey smell and enhances the overall aroma of the dish.
Tip: Ensure the chicken is well-coated to infuse the aroma thoroughly. - 3Add hot water

Pour hot water into the wok until the chicken pieces are fully submerged. This base will form the flavorful broth for the noodle soup.
Tip: Using hot water keeps the temperature consistent and helps maintain the meats texture. - 4Add dried mushrooms

Add the dried mushrooms, which have been soaked for ten minutes, to the pot. These provide a much more concentrated aroma compared to fresh mushrooms.
Tip: Soaking the mushrooms beforehand is essential to rehydrate them for proper cooking. - 5Stew the soup

Transfer the chicken and mushroom mixture into an electric rice cooker to stew. Allow it to cook for 1.5 hours to fully develop the flavors.
Tip: A clay pot can also be used if you have the time for a traditional slow-stew. - 6Season and finish

After stewing for 1.5 hours, add salt to taste and skim off the excess chicken oil from the surface to ensure the soup is not greasy.
Tip: Removing the excess oil keeps the soup light, fragrant, and clear. - 7Skim the chicken oil

After stewing for 1.5 hours, use a fine-mesh strainer to carefully skim the excess chicken oil from the surface of the broth. Removing this oil ensures that the final soup is light, flavorful, and not greasy.
Tip: Dont discard the skimmed chicken oil! You can save it to flavor other dishes like stir-fried vegetables or noodles. - 8Assemble the noodle bowl

Once the noodles are cooked, place them into a serving bowl. Carefully ladle the hot, fragrant chicken and mushroom broth over the noodles, ensuring you include the tender chicken pieces and rehydrated mushrooms.
Tip: Serve immediately while the soup is piping hot to ensure the best texture for the noodles.
