Classic American Clam Chowder
Bread Bowl
A rich and comforting American clam chowder featuring tender sea clams, smoky bacon, and potatoes simmered in a velvety cream broth inside a crusty bread bowl.
Clam chowder is a beloved coastal classic known for its hearty texture and deeply savory profile. By layering the smoky notes of rendered bacon with sweet clams, aromatic vegetables, and a luscious cream base, this traditional recipe delivers an exceptionally warming and satisfying bowl.
Ingredients
- 1 kg fresh clams
- 100 g bacon
- 1 onion
- 200 g potatoes
- 1 stalk celery
- 30 g butter
- 30 g low-gluten flour
- 50 ml white wine
- 150 ml fresh cream
- 4 round bread bowls
- to taste salt
- to taste black pepper
- optional fresh parsley
Instructions
- 1Boil the clams

Place the clams into a metal pot and pour in cold water. Bring the water to a boil until all the clams have opened up. Once they open, skim off any foam from the surface, remove the clams, and separate the meat from the shells.
Tip: Discard any clams that remain closed after boiling, as they are likely dead and unsafe to eat. - 2Fry the bacon

Add the diced bacon pieces into the pan and fry over medium heat until they become browned and release their rich aroma, rendering the fat. Remove a small portion of the cooked bacon to reserve for final garnishing later.
Tip: Make sure to reserve some of the crispy bacon bits for the final topping to add texture and flavor. - 3Sauté the vegetables

Add finely diced onions directly into the pan with the rendered bacon fat and bacon pieces, stirring to combine. Continue by adding diced potatoes and celery, sautéing the entire vegetable mixture until the components are partially cooked and softened.
Tip: Sautéing the vegetables in the bacon fat infuses them with a deep, savory flavor foundation. - 4Add butter and flour

Melt a pat of butter into the vegetable and bacon mixture, then evenly sprinkle in low-gluten flour. Stir-fry everything thoroughly to coat the vegetables and cook out the raw flour taste, creating a roux base that will thicken the chowder.
Tip: Stir continuously after adding the flour to prevent lumps and ensure a smooth, velvety texture in the final soup. - 5Deglaze with white wine

Pour white wine into the pan with the vegetable and bacon mixture, stirring constantly to deglaze the bottom of the pan and incorporate all the rich browned bits into the base.
Tip: Allow the alcohol to cook off for a minute so only the bright, complex flavor notes remain. - 6Pour in clam broth

Carefully pour the clam broth into the pan from a metal pot, taking care to leave any settled sand behind at the bottom of the broth container. Simmer the mixture for 20 minutes to let the flavors meld and the potatoes soften completely.
Tip: Always pour the broth slowly and watch the bottom of your stock pot to keep any residual grit out of your soup. - 7Add cream and season

Pour fresh cream into the simmering soup mixture to build its signature rich and velvety body. Season with salt and freshly ground black pepper to taste, then drop in the prepared clam meat and simmer on low heat for an additional 3 minutes.
Tip: Add the clam meat near the end of cooking and keep the heat low so the clams remain tender and do not become rubbery. - 8Add clam meat and simmer

Add the freshly shucked clam meat into the simmering chowder and stir gently. Cook on low heat for 3 minutes to allow the flavors to meld together without overcooking the tender clams.
Tip: Simmering on low heat ensures the clams remain tender and dont become rubbery. - 9Prepare the bread bowl

Take a round crusty loaf of bread and slice off the top section. Carefully pull out or hollow out the inner crumb to create a sturdy bowl that will hold the hot soup without leaking.
Tip: Leave enough thickness around the edges and bottom so the bread bowl stays structural when filled with hot soup.
