Make a professional-grade American beef burger at home, featuring rich homemade brioche buns, coarse-ground chuck patties, melted cheese, and fresh toppings.
The American beef burger is a masterclass in balance, combining a rich, buttery toasted bun with a juicy, coarse-ground beef patty and crisp vegetables. Making them entirely from scratch—from the cold-liquid enriched dough to hand-chopped chuck—elevates this popular street food into a rewarding culinary project.
Ingredients
- 500 g bread flour
- 180 ml cold milk
- 5 g instant yeast
- 30 g sugar
- 5 g salt
- 1 egg
- 40 g softened butter
- 600 g upper chuck beef
- 20 g butter for frying
- 4 slices cheddar cheese
- 1 tomato
- 1 head lettuce
- to taste salt and pepper
- to taste burger sauce
- to taste sesame seeds
Instructions
- 1Mix the hamburger bun dough

Place all liquid ingredients straight from the refrigerator into a stand mixer. Beat until a rough dough membrane forms, then add softened butter cut into small pieces and continue mixing until fully absorbed.
Tip: Using cold liquid ingredients helps control the dough temperature during mixing. - 2Test the dough windowpane stage

Stretch a small piece of the dough gently to check for gluten development. It should form a smooth, translucent windowpane membrane before proceeding to the first fermentation.
Tip: The windowpane stage ensures the buns will have the right structure and texture. - 3Toast the burger buns

Cut the freshly baked hamburger buns into two halves. Use butter to pan-fry the bread slightly on a flat pan until it has a light toasted feel and golden color.
Tip: Pan-frying the cut sides with butter adds rich flavor and prevents the bun from getting soggy. - 4Fry the beef patties

Add a little butter to the hot pan and place the beef patties on it to fry. After 3 minutes, flip them over, sprinkle some salt and pepper, and place a slice of cheese on top to melt completely.
Tip: Do not over-chop the meat when mincing so the patties retain a nice coarse granule texture.
