Finished with a splash of cream and freshly grated parmesan, it offers a beautifully balanced and indulgent meal that comes together quickly.
Ingredients
- 400 g spaghetti
- 1 tbsp olive oil
- 150 g bacon
- 1/2 onion
- 150 g white mushrooms
- 200 ml milk or heavy cream
- 1–2 tbsp black truffle sauce
- to taste sea salt
- to taste black pepper
- to garnish parmesan cheese
- optional fresh herbs
Instructions
- 1Boil the pasta

Bring a large pot of water to a boil. Add a splash of olive oil and a pinch of sea salt to the water, then add the spaghetti. Cook for about 8 minutes until al dente, then drain and set aside.
Tip: Adding olive oil to the boiling water helps prevent the pasta noodles from sticking together. - 2Prep your ingredients

On a clean cutting board, dice the onion, slice the mushrooms, and cut the bacon into small, uniform pieces. Having everything prepped before you begin ensures a smooth and stress-free cooking process.
Tip: Keep your knife sharp to make dicing the onions and bacon easier and safer. - 3Sauté the bacon

Heat a splash of olive oil in a pan over medium heat. Add the diced bacon and sauté until it becomes golden and releases its fat. This forms the flavorful base for the onions and mushrooms to be cooked in next.
Tip: Dont rush the bacon; let it render out its fat slowly to maximize the savory flavor. - 4Create the truffle sauce

After sautéing the onions and mushrooms and pouring in the milk or cream, lower the heat. Stir a generous spoonful of black truffle sauce into the creamy mixture, combining well until the sauce is uniform and aromatic. Adjust the amount of truffle sauce based on your personal preference for its intensity.
Tip: Black truffle sauce is very potent, so start with one spoonful and adjust to your taste preference. - 5Season the sauce

Add sea salt and freshly ground black pepper to the creamy sauce. Taste as you go, ensuring the seasoning balances well with the richness of the truffle and cream.
Tip: Freshly ground pepper provides a much better aroma and flavor depth than pre-ground pepper. - 6Combine pasta and sauce

Add the cooked spaghetti to the pan with the creamy truffle sauce. Toss thoroughly over low heat so that every strand of pasta is evenly coated in the sauce. Serve immediately with a garnish of shaved parmesan.
Tip: Toss the pasta quickly to ensure the sauce stays creamy and doesnt break. - 7Garnish and serve

Once the pasta is fully coated in the creamy black truffle sauce, transfer it to a serving bowl. Finish the dish by freshly grating parmesan cheese over the top to add a sharp, savory depth that perfectly complements the earthiness of the truffle.
Tip: Use a fine microplane grater to create a delicate, cloud-like layer of parmesan that melts slightly into the warm pasta.
