Korean beef and tofu stew is the ultimate comfort dish for chilly days, combining savory proteins, fiber-rich vegetables, and a fiery kimchi-infused broth. Inspired by traditional hot pot flavors, this low-calorie meal comes together easily in a single pot and pairs wonderfully with a steaming bowl of white rice.
Ingredients
- 150 g beef tenderloin
- 1 tbsp oyster sauce
- 1 tsp cornstarch
- 1 tbsp cooking oil
- 0.5 onion
- 2 green chili peppers
- 3 cloves garlic
- 2 tbsp Korean chili paste
- 100 g kimchi
- 1-2 bowls water
- 50 g Napa cabbage
- 3 shiitake mushrooms
- 50 g enoki mushrooms
- 150 g soft tofu
- 1 tbsp soy sauce
- to taste green onions
- to taste sesame seeds
Instructions
- 1Marinate the Beef

Place the beef tenderloin in a bowl and marinate with oyster sauce, cornstarch, and a little oil to keep the meat tender.

Slice the onions, green chili peppers, and garlic cloves on a wooden cutting board to prepare them for sautéing.

Add the sliced onions, chili, and garlic into a preheated pot and sauté until they become fragrant.
