Authentic Cantonese White Cut Chicken (Báiqiè Jī)
Master the ultimate Cantonese classic with tender meat, crystal-clear skin, and two traditional soul-dipping sauces.
White Cut Chicken is the ultimate test of culinary simplicity in Cantonese cuisine, where no heavy spices are used to mask the ingredients. The dish relies entirely on premium chicken, precise temperature control during simmering and ice-bath shocking, and the perfect aromatic dipping sauces to bring out its natural, fresh flavor.
Ingredients
- 1 free-range farm chicken
- 1 tbsp salt
- 3 stalks scallions
- 1 piece ginger
- 3 pcs cape jasmine fruits
- to taste minced sand ginger
- to taste red shallots
- to taste light soy sauce
- to taste sesame oil
- to taste cooking oil
Instructions
- 1Rub the chicken with salt

Sprinkle salt all over the whole free-range chicken and rub it evenly across the surface to remove impurities, then rinse thoroughly with clean water.
Tip: Rubbing with salt helps clean the surface and removes skin impurities effectively before poaching. - 2Prepare the poaching water

Fill a metal pot with water, and add a spoonful of salt, scallions, ginger, and a few crushed cape jasmine fruits (gardenia pods) to enhance the color and eliminate gaminess.
Tip: Crushed gardenia pods give the chicken skin a natural, appealing golden hue. - 3Scald the chicken

Hold the chicken by the neck and dip it into the boiling water pot, then lift it out three times. This process ensures that the inside and outside of the chicken are evenly heated.
Tip: Make sure to dip and lift the chicken three times so the heat distributes evenly. - 4Cool in ice water

Transfer the simmered chicken directly into a basin filled with ice water to quickly cool it down, making the skin extra crispy and refreshing.
