This classic chicken breast sandwich balances creamy mayonnaise with the sharp crunch of red onion and fresh cucumber. Brightened with a splash of lime juice and garlic, it makes for a quick and satisfying lunch or snack.
Ingredients
- 2 chicken breasts
- 4 slices white sandwich bread
- 3 tbsp mayonnaise
- 1/2 cucumber
- 1/2 red onion
- 1 clove garlic
- 1/2 lime
- 2 tbsp butter
- to taste black pepper
Instructions
- 1Add Mayonnaise to Chicken

Place the shredded chicken breast into a large glass mixing bowl and add a generous portion of mayonnaise directly onto the chicken.
Tip: Ensure the chicken is cooled before adding mayonnaise to maintain the best texture. - 2Add Chopped Cucumber

Add finely chopped cucumber pieces into the glass mixing bowl on top of the shredded chicken and mayonnaise.
Tip: Pat the chopped cucumbers dry with a paper towel if they are too watery to keep the filling crisp. - 3Add Red Onion

Pour finely chopped red onion from a small clear dish into the mixing bowl alongside the chicken and cucumbers.
Tip: Dice the red onion into uniform small pieces so it distributes evenly through the mixture. - 4Season with Black Pepper

Grind fresh black pepper directly over the ingredients in the mixing bowl to add a mild aromatic spice.
Tip: Freshly cracked black pepper provides a much better flavor than pre-ground pepper. - 5Mix Thoroughly

Use two forks to mix all the ingredients in the glass bowl together thoroughly until the mayonnaise coats everything evenly.
Tip: Toss gently to avoid mashing the vegetables while ensuring complete combination. - 6Add Lime Juice

Hold a fresh lime half over the bowl and squeeze its juice into the mixed chicken salad to add a bright citrus note.
Tip: Remove any seeds from the lime before squeezing to prevent them from falling into the mixture. - 7Mix the filling thoroughly

Continue stirring and blending the chicken breast, chopped cucumber, onion, mayonnaise, black pepper, lime juice, and garlic together until all the ingredients are evenly coated and combined.
Tip: Make sure the dressing is distributed evenly so every bite has a balanced flavor. - 8Add chopped garlic

Add a little chopped garlic into the bowl containing the chicken salad mixture and continue mixing thoroughly.
Tip: Freshly chopped garlic provides a sharp and aromatic kick to the filling. - 9Spread butter on bread

Take slices of white sandwich bread and spread a layer of butter evenly onto one side of each slice using a knife.
Tip: Butter acts as a moisture barrier to keep the bread from getting soggy from the filling. - 10Add chicken salad filling

Spoon and spread a generous amount of the prepared chicken salad filling onto the buttered side of the bread slice.
Tip: Distribute the filling evenly to ensure every section of the sandwich gets an equal amount.
