Kimchi Pork Donburi (Rice Bowl)
A savory Korean-Japanese rice bowl featuring crisp caramelized kimchi, tender thinly sliced pork, and a rich runny fried egg over hot rice.
Kimchi pork donburi fuses the comforting format of a Japanese rice bowl with the bold, fermented kick of Korean stir-fried kimchi pork (buta kimchee). Lightly coating the pork in flour before stir-frying helps lock in juiciness while thickening the naturally rich kimchi juices into a glossy, intensely flavorful sauce.
Ingredients
- 200 g thinly sliced pork
- 200 g kimchi
- 2 tbsp kimchi juice
- 1/4 onion, sliced
- 2 cloves garlic, sliced
- 1 tbsp all-purpose flour
- 1 tbsp sesame oil
- 1 egg
- 1 cup cooked white rice
- optional chopped green onions
- to taste toasted sesame seeds
Instructions
- 1Coat the pork

Place 200 grams of thinly sliced pork onto a tray. Sprinkle flour evenly over the meat and toss it by hand until every slice is well coated. This step helps to thicken the sauce and gives the pork a better texture.
Tip: Make sure to separate the slices as you toss them so the flour coats all sides evenly. - 2Fry the Garlic and Pork

Fry the garlic slices in sesame oil, then add the flour-coated pork and stir-fry until it changes color.
Tip: Coat the pork evenly with flour to help lock in moisture during stir-frying. - 3Stir-fry the pork

Once the garlic slices are fragrant in the sesame oil, add the flour-coated pork into the pan. Stir-fry the meat continuously over the heat until it changes color completely.
Tip: Keep the heat at a medium-high level to get a nice sear on the pork without burning the garlic. - 4Add the onions

After the pork has browned, add a quarter of a sliced onion to the pan. Mix it well with the pork and continue cooking until the onions begin to soften slightly.
Tip: Slicing the onions thinly ensures they cook at the same pace as the pork and blend well into the dish. - 5Mix in the kimchi

Pour an equal weight of kimchi, along with a splash of its flavorful juice, directly into the pan with the pork and onions. Turn the heat to high and stir-fry everything together until the mixture reaches a slightly dry, caramelized state.
Tip: The kimchi and its juice contain all the seasoning you need, providing a rich, savory, and spicy flavor profile. - 6Fry an egg

In a separate small frying pan, heat a little oil and crack in an egg. Fry it to your desired doneness—leaving the yolk runny is highly recommended for mixing into the donburi.
Tip: Serve this dish by placing the hot kimchi pork over a bowl of rice, topping it with this fried egg, sesame seeds, and chopped green onions. - 7Assemble and Garnish the Rice Bowl

Serve the cooked kimchi pork over rice, place a fried egg on top, and garnish with sesame seeds and chopped green onions.
Tip: No extra seasoning is needed as the kimchi and pork flavor is already rich and perfect.
