Ingredients
- 400 g pizza dough
- 100 g white mushrooms
- 100 g porcini mushrooms
- 150 g Italian sausage
- 200 g shredded mozzarella cheese
- 2 cloves garlic
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
Instructions
- 1Oil the mixing bowl

Take a paper towel soaked in oil and thoroughly wipe down the inside of a clean metal mixing bowl to create an essential oil spa for the equipment before adding dough.
Tip: Make sure the entire interior surface is evenly greased to prevent the dough from sticking during fermentation. - 2Divide the dough

Place the prepared dough onto a wooden cutting board and use a large knife to divide it into equal portions.
Tip: Make sure to cut the portions evenly so they bake at the same rate. - 3Slice the mushrooms

Place white mushrooms and porcini mushrooms on a white cutting board and slice them evenly using a sharp knife.
Tip: Maintain a consistent thickness so that the mushrooms cook uniformly during stir-frying. - 4Sauté the garlic

Heat oil in a wok and add garlic cloves, sautéing them until fragrant and lightly golden.
Tip: Keep the heat medium so the garlic infuses the oil without burning. - 5Stir-fry the mushrooms

Add the sliced mushrooms into the wok with the garlic, season with a little salt and black pepper, and stir-fry until the moisture dries up.
Tip: Cook until all the excess liquid evaporates to concentrate the rich mushroom flavor. - 6Form the pizza base

Take the fermented dough piece and press it down from the center out toward the edges until it reaches the desired thickness on the baking paper.
Tip: Press gently and evenly to maintain the air bubbles inside the dough. - 7Add the cheese layer

Sprinkle shredded cheese evenly across the prepared pizza dough base, leaving a small border around the edges.
Tip: Ensure an even distribution so the cheese melts uniformly during baking. - 8Arrange the mushrooms

Take the stir-fried white and porcini mushrooms and arrange them neatly over the cheese layer on the pizza base.
Tip: Make sure the moisture has completely dried from the mushrooms before adding them so the crust doesnt become soggy. - 9Add the sausage slices

Arrange authentic Italian sausage slices neatly over the mushroom layer, keeping about a half centimeter border at the edge.
Tip: Space the sausage slices evenly to ensure every slice gets a good portion of flavor. - 10Bake the pizza

Place the fully assembled pizza into a preheated oven and bake at 230 degrees for 6 minutes, then sprinkle with more shredded cheese and bake for another 5 minutes.
Tip: Keep a close eye during the final minutes to prevent the cheese from burning. - 11Add extra cheese layer

Open the oven after the pizza has baked for the initial duration, and generously sprinkle additional shredded cheese over the top before returning it to finish baking.
Tip: Adding cheese in two stages prevents the top layer from burning while ensuring a gooey, melty texture.
