Korean-Style Miso Marinated Pork Belly
Elevate your pork belly with this savory-sweet Korean-style miso marinade. A perfect balance of soybean paste, aromatic ginger, and garlic for deep, rich flavor.
This Korean-style miso pork belly brings a sophisticated depth of flavor to a classic cut of meat. The marinade utilizes the earthy, umami-rich notes of Korean soybean paste, balanced by the sweetness of maltose and the brightness of ginger and garlic. It is a versatile preparation that works beautifully for grilling, roasting, or pan-searing.
Ingredients
- 200 g pork belly
- 100 g Korean soybean paste
- 100 g maltose
- 80 g cooking wine
- 50 g soy sauce
- 20 g minced garlic
- 10 g minced ginger
- 20 g sesame oil
Instructions
- 1Slice the pork belly

Take 200g of pork belly and cut it into strips approximately 0.5cm thick. Ensure the strips are uniform to allow for even marination.
Tip: Chilling the pork belly in the freezer for 15-20 minutes before cutting makes it much easier to slice into thin, clean strips. - 2Prepare the marinade base

Place 100g of Korean soybean paste into a large mixing bowl. This will serve as the rich, savory base for your pork belly marinade.
Tip: Use a high-quality Korean soybean paste (doenjang) for the best depth of flavor. - 3Add the liquid seasonings

Add 100g of maltose, 80g of cooking wine, 50g of soy sauce, and 20g of sesame oil to the bowl with the soybean paste. The cooking wine helps balance the richness of the paste.
Tip: Maltose can be thick; warming it slightly before adding will help it incorporate smoothly into the sauce. - 4Mix the marinade

Add 20g of minced garlic and 10g of minced ginger to the bowl. Stir the mixture thoroughly until the ingredients are completely combined into a thin, uniform sauce.
Tip: Ensure the sauce is smooth and not sticky so it can evenly coat every piece of pork. - 5Marinate the pork

Add the pork belly strips to the bowl. Ensure each strip is well-coated with the marinade and let it marinate for at least 6 hours.
Tip: For the most flavorful results, you can marinate the pork for up to 12 hours in the refrigerator. - 6Store the pork

Arrange the marinated pork belly strips neatly in a clear rectangular container. Pour any remaining marinade over the top to keep the meat moist while it cures.
Tip: Using a sealed container helps the pork absorb the flavors evenly without drying out in the fridge.
