Grilled Garlic Ramen
Soft Egg
A late-night flavor booster featuring instant ramen elevated with intensely soft, roasted garlic cloves boiled right into a rich, savory red broth.
Transform ordinary packet ramen into an extraordinary late-night comfort meal with the magic of slow-roasted garlic. Roasting the garlic heads until completely tender creates a rich, mellow sweetness that infuses the soup base, while leaving a few skins on during boiling adds a deep, savory complexity to the broth.
Ingredients
- 1 packet Ansung Tangmyeon noodles
- 1 whole garlic bulb
- 550 ml water
- 1 egg
- 1 stalk spring onion
Instructions
- 1Cut the garlic

Place the garlic bulb on a wooden cutting board and cut it into sections to prepare for roasting.
Tip: Cut the garlic open across the cloves so they are exposed for roasting. - 2Air fry the garlic

Place the cut garlic bulb and individual cloves into the air fryer basket.
Tip: Air fry at 200 degrees for 20 minutes, though 15 minutes is also enough to make the garlic completely soft. - 3Chop spring onions

Chop the spring onions into small slices on a wooden cutting board to use as a garnish later.
Tip: Finely chop the spring onions for better distribution and presentation. - 4Boil the water

Pour 550ml of water into a white pot on an induction cooktop and add the roasted garlic cloves.
Tip: Use exactly 550ml of water for the proper soup ratio. - 5Simmer garlic broth

Boil the roasted garlic cloves and their skins together in the water to infuse the soup with rich flavor.
Tip: Boiling the skins along with the cloves adds deep flavor to the broth. - 6Add ramen noodles

Fish out the garlic skins from the boiling soup, then add the ramen noodles and boil for 3 minutes.
Tip: Make sure to remove the loose skins before dropping in the noodles. - 7Add an Egg

Crack an egg directly into the pot of boiling ramen soup and allow it to cook for about 1 minute without stirring too much, letting the white set while keeping the yolk soft.
Tip: Do not over-stir after adding the egg if you want the yolk to remain creamy and intact.
