Ingredients
- 1 portion buckwheat noodles
- 50 g white radish
- 60 g cabbage
- 40 g bean sprouts
- 50 g cured beef
- 1 soft-boiled egg
- 2 tbsp corn kernels
- 1 tbsp white miso paste
- 1 stalk scallions
- to taste water
Instructions
- 1Slice the White Radish

Place the peeled white radish on a wooden cutting board and cut it into neat shreds to prepare for the soup.
Tip: Cut the radish into even shreds so it cooks uniformly and blends well with the noodles. - 2Shred the Cabbage

Take the fresh cabbage and slice it into fine shreds on the wooden cutting board next to the radish.
Tip: Ensure the cabbage shreds are similar in thickness to the radish for a balanced texture. - 3Blanch the Vegetables

Bring a pot of water to a boil, then add the prepared shredded cabbage and radish to blanch them briefly.
Tip: Blanching the vegetables helps soften them and removes any harsh raw taste before assembly. - 4Slice the Cured Beef

Take the piece of cured beef and carefully slice it into thin, even pieces on the cutting board.
Tip: Slice the beef thinly so it absorbs the warm soup flavors easily. - 5Layer the Vegetables in the Bowl

Prepare the serving bowl by placing the blanched radish at the bottom, followed by a layer of cabbage and bean sprouts.
Tip: Layering the vegetables at the bottom ensures they soak up the rich miso broth. - 6Add the Buckwheat Noodles

Lift the freshly cooked buckwheat noodles using a strainer and place them into the bowl directly on top of the vegetable bed.
Tip: Drain the noodles well before adding them to keep the broth from becoming watery. - 7Mix White Miso Soup Base

Scoop a spoonful of white miso paste directly into a pot of hot water, then slowly stir and mix it well until fully dissolved to create the flavorful soup base.
Tip: Add the miso paste slowly and stir continuously to prevent any clumps from forming in the soup. - 8Pour Miso Soup and Corn

Add a spoonful of corn kernels into the bowl over the prepared noodles and vegetables, then carefully pour the freshly boiled miso soup over all the ingredients.
Tip: Pour the hot soup slowly around the edges of the bowl so the arranged ingredients stay neatly in place. - 9Add the soft-boiled egg

Take a freshly boiled soft-boiled egg, slice it cleanly in half, and place the halves onto the assembled bowl of buckwheat noodle soup alongside the other ingredients.
Tip: Slice the egg with a sharp knife or a thread to keep the soft yolk intact and clean.
