Chicken Pasta

This one-pot pasta method combines convenience with deep flavor, allowing the starches from the noodles to naturally thicken the sauce as it simmers. Ingredients
- 150 g bacon
- 200 g chicken breast
- 100 g mushrooms
- 1 onion
- 200 g pasta
- 200 ml coconut milk
- 250 ml water
- 1 tbsp tomato paste
- 1 tbsp chili oil
- 50 g spinach
- 1 egg yolk
- to taste smoked paprika
- to taste garlic powder
- to taste black pepper
- to taste salt
- optional parsley
Instructions
- 1Fry the bacon

Add chopped bacon to a pot over heat and fry until crisp and rendered. Use tongs to manage and stir the pieces, then remove the bacon from the pot once cooked.
Tip: Make sure to render the fat completely so it leaves behind flavorful oil for searing the chicken. - 2Sear the chicken breast

Transfer seasoned chicken breast pieces into the same pot with the remaining bacon fat. Sear until the exterior is lightly browned and cooked through.
Tip: Do not overcrowd the pot if cooking in large batches to ensure a proper golden sear. - 3Add chopped onions

Toss freshly chopped onions directly into the pot containing the chicken. Sauté them until they become translucent and fragrant.
Tip: Scrape up any browned bits stuck to the bottom of the pot as the onions release their moisture. - 4Add sliced mushrooms

Add sliced mushrooms into the pot with the onions and chicken. Cook them down until they soften and absorb the flavors in the pot.
Tip: Slice the mushrooms evenly so they cook at a consistent rate. - 5Add dried pasta and liquids

Pour water and coconut milk or heavy cream into the pot along with seasonings. Add the dried pasta directly into the mixture to cook all in one pot.
