Combining earthy varieties like cordyceps flowers and bamboo fungus with pan-fried tofu, all harmonized in a rich broth, it delivers a complex umami experience that rivals any meat dish.
Ingredients
- 7 types assorted mushrooms (including shiitake, oyster, white mushroom, bamboo fungus, cordyceps flower, red pine, and chicken fir mushroom)
- 1 block firm tofu
- several cloves garlic
- 3 caps light soy sauce
- 1 cap mushroom sauce
- 1 cap oyster sauce
- 2 caps hoisin sauce
- as needed water
- as needed cooking oil
- to taste fresh cilantro
- to taste birds eye chilies
Instructions
- 1Prepare the Assorted Mushrooms

Gather and display a diverse selection of raw mushrooms, including shiitake, bamboo fungus, cordyceps flowers, and other fresh varieties, ensuring all ingredients are clean and ready for preparation.
Tip: Choose a variety of textures among the mushrooms to create a rich and complex mouthfeel in the final broth. - 2Slice the Mushrooms

Place the cleaned mushrooms onto a wooden cutting board and slice them into uniform pieces to ensure even cooking.
Tip: Keep the slices thick enough so they retain a satisfying bite after simmering in the claypot. - 3Slice the Firm Tofu

Take a block of firm tofu and slice it into clean triangular pieces on the wooden cutting board, preparing it for pan-frying.
Tip: Firm tofu holds its shape much better during long simmering processes compared to soft tofu. - 4Pan-Fry the Tofu Triangles

Place the sliced tofu triangles into a preheated claypot with hot oil, frying them until both sides turn a rich golden brown and develop a firm crust.
Tip: Ensure the oil is adequately hot before adding the tofu to prevent sticking and achieve an even crust. - 5Sauté Garlic and Add Mushrooms

Sauté whole garlic cloves in the remaining oil inside the claypot until fragrant, then add the prepared raw mushrooms to the pot.
