Starch-Free Kimchi Chicken Oyakodon
A high-protein, starch-free twist on classic Japanese oyakodon, swapping rice for crumbled tofu and layering tender chicken, spicy kimchi, and velvety eggs.
This low-carb personal meal adapts the traditional comforting warmth of Japanese oyakodon for fat loss goals. By substituting rice with finely pressed and sautéed tofu combined with rendered chicken fat, it achieves a satisfying texture while keeping it light, savory, and rich in umami.
Ingredients
- 1000 ml water
- 1 tbsp salt
- 1 block firm tofu
- 1 chicken breast
- 1 chicken thigh
- 4 eggs
- 150 g kimchi
- 1 onion
- 3 tbsp soy sauce
- 3 tbsp rice wine
- 3 tbsp mirin
- 120 ml water
- to taste seasoning powder
- to taste green onions
Instructions
- 1Prepare the Brine

Add 1000ml of water and 1 tablespoon of salt to a metal bowl. Stir well to dissolve the salt and create a saltwater brine, which will be used to tenderize the chicken breast.
