Mayu, or black garlic oil, is the secret weapon of Kumamoto-style ramen. By taking garlic past the point of caramelization to a deep, dark char, it develops a profound smokiness without the harsh bitterness you might expect. Blended with rich melted lard, it floats on top of creamy pork broth, adding both striking visual contrast and layers of complex umami.

Place a small saucepan onto the stove over medium-low heat. Add 300g of lard and allow it to gently melt down into a clear liquid. Insert a cooking thermometer to monitor the temperature and prevent the fat from overheating or smoking.

Once the lard has completely melted, carefully add 150g of whole, peeled garlic cloves directly into the hot fat.

Maintain a steady medium-low heat so the garlic can slowly fry and release its natural aromatic oils into the lard. Stir periodically as they cook to ensure even browning.
